DETERMINATION OF GLUTEN IN FOODS
In food processing, there are several critical points that can lead to gluten contamination of food when products with and without gluten are made in the same manufacturing or production line.

The consumption of manufactured products entails assuming potential risks for celiac patients, since gluten can be added to a product as an ingredient, additive, or it may contain it for technological reasons of the manufacturing process.

Therefore gluten can be present not only in products made from wheat, barley, rye and oat flour, such as bread, pasta, cakes and cookies, but also in sausages and meat derivatives, sauces, appetizers, sweets , prepared meals, etc. and even in certain medicines as an excipient.
